Adapting to a “Lyme Safe” diet can be challenging. The recipes you will find here are almost all gluten free (gf), sugar free (sf), and dairy free (df). Of course that doesn’t mean that they will suit everyone’s dietary needs, but it’s a great start. Most recipes are my own but, if you have some great ones and would like to share, I would love to add them!

Some recipes have optional goat or sheep products (cheese, milk, yoghurt). These products do contain casein. If you are truly going casein free, omit them. It won’t ruin the recipes.

Recipe for Nacho Cheese!!! This is GF, SF, and DF…and delicious!!!

    Vegan or Raw Nacho Cheese

    2 cups filtered water
    1 cup soaked raw cashews
    1 lemon, juiced
    1/2 t. paprika
    1/2 t. garlic powder
    1/2 t. onion powder
    1/2 t. sea salt
1 cup of cherry peppers (if you are raw)
    or
    1 7oz. jar or pimentos
1/2 c nutritional yeast (this will not hurt
    yeast problems)

Put all ingredients into the blender and blend until smooth. Then put into pan and simmer for 10 minutes…
Keep refrigerated if you don’t eat it all in one serving…:)

Do you have anything for someone who can’t eat any solid foods? I can’t swallow anything other than gatorade..(g-2) and haven’t been able to eat for 10 yrs.

    Any suggestions?

Yes! Kim from Affairs of Living has some great smoothies and she recently posted a chocolate mousse. My favorites so far have been avocado based. Kim’s recipes are all very allergy friendly – http://www.affairsofliving.com/

  3. Website not up yet. You might suggest rotating. I’m allergic to dairy, but I use goat kefir in my smoothies very four days. Chocolate gives me migraines, so I use it about every eight days. It works!

  4. Lyme Disease Says:

I just started eating mostly vegetables and fruits for the past week or so, and I already feel a huge difference. I also stopped smoking cold turkey.

Gave up on dairy, gluten and alcohol as well.

Thanks for the list, this will surely come in handy.
